Aji Omni-Color Chile Pepper Seeds

Aji Omni-color pepper plant grows 12-18 inches tall, spreads out to about 2 feet. Pods are 2 to 2.5 inches long by 0.5 inch wide; Fruit matures from pale yellow/white to purple splotched to yellow to orange to red; upright pods and excellent flavor. Real beauty in the garden with a unique flower also. Very prolific ornamental from Peru, Hot. C. baccatuum.

Plant 18 to 24 inches apart in rows 3 to 4 feet apart.

We make trips to the post office 2-3 times per week, sometimes every day. Most US addresses get their package within one week or less, depending on where you live. Huancaína (wan-kay-eena) sauce is typically served over cold sliced potatoes in the famous Peruvian dish Papas a la Huancaína. Made with Aji peppers, it is a versatile sauce that goes with many flavors. Serve it as a dipping sauce for bite-size potatoes or raw vegetables. Adjust spiciness by using fewer or more Aji peppers.

Ingredients:

• 4 tablespoons vegetable oil
• 1/2 cup chopped onion
• 4-5 yellow Aji chile peppers (frozen is fine)
• 2 cloves garlic, mashed
• 2 cups white farmer's cheese (queso freso)
• 4 saltine crackers for salty taste or
  animal crackers for a sweeter taste
• 3/4 cup evaporated milk
• Salt and pepper to taste

Directions:

Remove seeds and stems from yellow chile peppers and chop into 1 inch pieces.


Sauté onion, garlic, and chile peppers in the oil until onion is softened, about 3-5 minutes. Remove from heat and let cool. 


Place onion/chile mixture in a food processor or blender. Add evaporated milk and blend.


Add cheese and crackers and blend until smooth. Sauce should be fairly thick. Thicken sauce with more crackers or thin sauce with milk if necessary. 


Season with salt and pepper to taste. 


Serve at room temperature or chilled.
