The Aji Habanero pepper is from South America with a mild heat range. Pods grow 2 to 2.5 inches long by .5 to .75 inches wide. Fruit matures from pale yellow to golden orange. Grows 22-28 inches tall by 18 inches wide. Prolific, mid to late season fruiting. C.baccatuum.
Plant 18 to 24 inches apart in rows 3 to 4 feet apart.

This sauce can be yellow or bright orange colored depending when you harvest your Aji Habaneros. Each stage of ripening has a different flavors.
Add the chopped onions with all the rest of the ingredients (except the salt and pepper) and process in a food processor or blender until mixture is smooth and creamy.
Season sauce with salt and pepper to taste, and chill until ready to serve.
Note: This sauce seems to taste even better after 24 hours in the refrigerator. Store in the refrigerator for up to one week.
